This Tropical Banana Foster recipe by Beach Girl Grills is one of our favorite desserts that is sweet, creamy, and delicious, and guaranteed to have everyone fighting over the last bite.
Ingredients:
4 bananas, firm, cut into 1” halves
4 tbsp salted butter
3/4 cup brown sugar
¼ tsp cinnamon
¼ cup orange juice
¼ dark rum
1 tbsp orange zest
½ cup coconut flakes
½ cup unsalted macadamia nuts, chopped
Coconut or vanilla ice cream for serving
Directions:
- Heat grill to 350-400 degrees. Place a grill safe skillet over direct heat and allow it to heat through.
- Add coconut flakes and macadamia nuts. Continually stir them until they are lightly toasted and golden, 3-4 minutes. Set aside.
- Return the pan to the grill. Melt the butter, brown sugar, and cinnamon, stirring until the sugar is slightly dissolved. It will be a little lumpy.
- Add the orange juice and continue to stir until it is bubbly.
- Place the bananas into the skillet, cut side down. Allow them to cook for 2 minutes.
- Remove the skillet from the heat and pour in the rum. Carefully use a lighter to flambe the rum. Allow it to cook until the flames burn off.
- Stir in the orange zest.
- To serve, scoop ice cream into individual bowls. Top with the bananas and caramel sauce. Sprinkle the toasted coconut and macadamias over the top.
