Our Aspire Holiday series is coming to an end, but not without a bang. This Reverse Sear Beef Tenderloin w/ Gorgonzola Cream Sauce recipe by Cheeky BBQ is savory, creamy, and addicting.

Ingredients:
1 Beef tenderloin, trimmed
6oz Gorgonzola Cheese crumbles
2 cups half and half milk
1 tbsp kosher salt
1 tbsp cracked black pepper
2 tbsp olive oil
Chives, garnish
Directions:
- Preheat Aspire grill for two zone cooking.
- Lightly coat tenderloin with olive oil and season with salt.
- Sear steak over direct heat until all sides are well browned. Transition tenderloin to indirect heat and insert meat thermometer with a target temperature of 125°.
- Place sauce pan with half and half over direct heat and reduce by half. Remove pan from heat and whisk in Gorgonzola crumbles, whisking until combined.
- Once tenderloin has hit the desired internal temp, let rest for 10-15 minutes. Slice against the grain, top with fresh cracked pepper to taste, then cheese sauce, and finish with chives.
